Saffron comes from the Crocus flower. Weighing almost nothing, it is one of the world’s most costly ingredients by weight. It is grown in La Mancha, Spain. It is picked by hand with each Crocus flower containing only a few threads. The threads are red in color and add a subtle floral flavor and yellow color. It is the only spice used in paellas giving them their distinct taste, color and aroma.
It's mild distinctive aroma/taste is very versatile beyond using it for paella, try it in seafood stews, steamed mussels and clams, boiled potatoes, stewed chicken dishes, etc...A small pinch goes a long way.
