Branzino is a mild white flaky fish sustainably farmed in Spain and Greece.
Excellent seared skin side down in a non stick pan on medium heat in olive oil until it's thin skin is crispy. Add some whole crushed garlic cloves to pan while cooking and towards end of cooking some thyme sprigs.

Filets average 4 to 6 ounces. We recommend 2 filets per person so assume at least 1/2 pound per person.
