Delmonico steak is a tender, well-marbled cut of beef that comes from the chuck eye roll. This is the opposite end of the same primal cut where you get rib eye steak. This cut is known for its unmistakably rich, juicy flavor and tender texture. Most importantly it includes the ribeye "Cap" which curves around the center of the steak and is highly regarded by meat connoisseurs as being equally tender as it is flavorful! Certified Humane Angus Beef (CAB), hormone and antibiotic free. Sold by the piece.
