Our flank steak is a thick grained, lean cut of beef. It is packed full of flavor and needs to be prepared correctly in order to keep it tender, preferably no more than medium doneness . Flank steaks are best cooked on high heat and given lots of time to rest. It is also fantastic when slow cooked and can be "pulled" into ribbons for a Cuban style "Roa Vieja".
