Our Short Ribs are from grass fed, grain finished steer. That balance gives a well marbled short rib and when braising provides depth of flavor and if grilling. Note, when grilling boneless short ribs they will be a tougher cut however VERY flavorful, try it! Each rib is approximately 2- 2.5" and average .33lbs. While this cut is traditionally braised and slow cooked, if cooking on a grill or hot skillet - it is a tougher eating steak. However since we carve this cut from the rib bone it has a lot of flavor.
