We make these tasty sausages using all beef, no pork at all in these. We use Beef Chuck, Short Rib and Brisket resulting in a very lean sausage with less fat.
The sausage casings are not from pork, we use Lamb casing to ensure an all beef sausage.
Great on the grill and served on toasted baguette as a sandwich!
We recommend grilling sausages on low to medium heat for a slower gentle cooking process that prevents the casing from rupturing.
