We only use domestic raised lamb from Colorado and Pennsylvania which has been grass fed and pasture raised. Humanely Raised & Non GMO. The breed of lamb we use is a Suffolk and Dorset cross breed. Both are english heritage breeds. The result of crossing Suffolk and Dorset breeds simply put is superior lean, extra meaty “good eats” lamb. We prepare our boneless lamb shoulder with the thought that it will be used for a roast, braise or a stew. We trim out a lot of the fat and leave just enough to ensure moisture and flavor during the cooking process. For best results cook slowly with moist heat. Best for slow roasting & braising. Whole boneless lamb shoulder averages 3.5 to 4 pounds.
