We only use domestic raised lamb from Colorado and Pennsylvania which has been grass fed and pasture raised. Humanely Raised & Non GMO. The breed of lamb we use is a Suffolk and Dorset cross breed. Both are english heritage breeds. The result of crossing Suffolk and Dorset breeds simply put is superior lean, extra meaty “good eats” lamb. Lamb shanks are meant to be braised resulting in fall off the bone tender meat with a lot of flavor. Lamb shanks are 1.25 to 1.50 pounds average weight. 1 shank serves 1 person. Sold by the piece.
