We only use domestic raised lamb from Colorado and Pennsylvania which has been grass fed and pasture raised. Humanely Raised & Non GMO. The breed of lamb we use is a Suffolk and Dorset cross breed. Both are english heritage breeds. The result of crossing Suffolk and Dorset breeds simply put is superior lean, extra meaty “good eats” lamb. Our hand trimmed and frenched lamb racks are quite lean and have soft fat marbling resulting in a cleaner flavor. Each rack has 7 points. ( a "point" refers to the frenched rib) Perfect to grill, oven roast or pan sear. Priced by the whole rack, 1 rack of 7 points, and feeds 2 people.
