Our Bacalao is a whole, bone in, skin on salted Cod. Fish having bones and skin retain its natural oils and collagen that give optimal and best flavor to a dish. This is your BEST QUALITY salted cod. This is sold as a Whole Fish. Please choose preparation below of WHOLE or CUT. We trim the tail and fins, cut the side belly flaps into two inch wide strips, cut the center loin in half down the middle and cut 1.5 inch loin filets. If you do not choose, we will send it cut. This preparation needs to be soaked 36 to 48 hours. Average weight 7 to 9 pounds each.
